— vegan, gluten-free, and made from unrefined and unprocessed ingredients;
— easy to make, easy to give as gifts, easy to eat (<— very important);
— incredibly delicious (see above); and
— a mere three of the magical creations dreamed up and brought to (culinary) life by Lisa Pitman and Nicole Axworthy in their newest shining eBook, Edible Gifts.
One of the benefits of being Lisa’s soulsister is that when I got my copy of Edible Gifts, I also got a goodie bag filled with treats from the book, as made by Lisa and Nicole themselves. Am I dreaming? Pinch me.
Sometimes life is so very, very sweet.
I can tell you, hand over heart, that this eBook is gorgeous (Lisa and Nicole have mad photography skillz), the recipes are doable for kitchen novices and whizzes alike, the photos show a myriad packaging ideas (useful when you’re someone like me who tells their family in Australia to pretend the postage envelopes for their Christmas presents are wrapping paper) and, most importantly, the desserts, drinks, and snacks you’ll make from it are wonderful.
In the photos above, you see a raw German Chocolate Brownie, which was rich in coconut, pecan and chocolate flavours; a Coco-Nut Macaroon, a batch of which I later baked myself; Chai Spiced Popcorn, which had All Of The Spices and was magical; and a Salted Caramel Cup, which you definitely want. You definitely want to make those.

I also got to try the Banana Bread Biscotti, which rivalled (perhaps exceeded) the tastiness of the biscotti I had a few months ago in Utah. Other recipes in the eBook include single-serving desserts like the Tiramisu To Go and Mini Cherry Cheesecakes, a Winter Sangria Mix (Lisa’s sangria is always the best), and so much more.
The Coco-Nut Macaroons, made with a hearty dose of almond meal alongside coconut, vanilla, and maple syrup, were gobbled up at my dinner party last weekend quicker that you can say “The Nightmare Before Christmas is an awesome movie and I’m going to play its songs on the piano once I finish writing this post”.
