Eating pancakes for lunch at IHOP Restaurant proved such a trashy delight the first time around that it didn’t take me long to corral more participants willing to do it again.
This was for scientific purposes, of course. I had to see whether my previous pancake pleasure (hey there, alliteration) had been an anomaly or, even better, the beginning of a new and beautiful pillows-of-carbs friendship.

You have changed me. I definitely like pancakes now. Let’s get matching friendship bracelets and skip through green fields before making daisy chains together.
The spectacular, shining, splendid and super Shay (hey there, alliteration), whom I miss greatly because she is hilarious and wonderful, went all out with the “Tiramisu Pancakes: Buttermilk pancakes and sweet mocha cream topped with a drizzle of chocolate, whipped topping and a dusting of cocoa powder”. These also came with bacon, eggs, and hash browns because, well, ‘MURCAH!
This dessert-lunch could have had a slightly stronger coffee flavour, but heck: Tiramisu Pancakes. They exist. Simply knowing that is almost enough.
Lindsey tried the Peaches and Cream Brioche French Toast. According to IHOP’s website, this is brioche slices “dipped in a lightly sweetened vanilla batter and grilled to golden perfection, topped with sliced peaches and crunchy honey-roasted pecans, and finished off with vanilla cream drizzle and whipped topping.”
Leaving aside, for the moment, the fact that “whipped topping” is a terrifying term that connotes nothing (neither “whipped” nor “topping” are clearly defined foodstuffs, and two wrongs do not make a right), the lovely, larksome and luminous Lindsey managed a good two-thirds of this dessert-lunch before proclaiming defeat.
