My love for and quest to use black sesame powder in All The Things continues with these Paleo Black Sesame Coconut Flour Muffins.
Of course, I do not for one single second believe that “paleo” cavemen ever had little plastic ziplock cavebags of black sesame seeds in their cavepantries with which to make cavemuffins whilst debating whether to do CaveCrossFit or continue listening to Cave of Thrones audiobooks on their cavEpods.
What I do believe is that these gluten-free, dairy-free, grain-free (I think? Is coconut sugar a grain? Eh, I have no idea about all the different fanatical diet classifications popping up these days) black sesame coconut flour muffins are everything I hoped/imagined they’d be when trying to fall asleep one night. (Before you say anything, conjuring up dessert ideas at 2am is a far better use of my time than, say, eating half a jar of peanut butter. Which I definitely haven’t done before. Ahem.)
Soft, sponge-like-yet-firm, nutty, smoky, not-too-sweet-yet-sweet-enough, and equally appropriate as a light snack, part of a healthy breakfast, or dessert (when eaten alongside vegan black sesame ice cream), I’ve already made three batches of these black sesame coconut flour muffins and see no reason not to make another once I’ve finished the one I’m eating now.
Oh, did I mention that these paleo black sesame coconut flour muffins use only six ingredients, are pretty high in fibre and protein, and can be whipped up in one bowl in just over half an hour?
I could probably live on these muffins, roasted delicata squash, coffee, and hugs right now.
