Today is five weeks plus two days since Christmas. You know what that means, don’t you?
Yes! Exactly! Five weeks plus two days since Christmas is the traditional day to blog about presents made and given to fathers and paternal grandmothers!
What, you didn’t know that?
For shame.
Now, the best thing to do when you’re making an edible gift for your father and paternal grandmother is this:
1. Think about how your father and paternal grandmother each have a sweet tooth,
then
2. Build each of them a model aircraft!
Wait, no. That’s not right. Let’s try again.

2. Take several ingredients that are rather delicious on their own, melt ‘em together, and
voila!
3. Homemade Chocolate Nutella Fudge with Sprinkles.
The original recipe, by Cookin’ Canuck, was for Nutella fudge topped with sea salt. However, I decided to switch the sea salt for the prettier and more generically-approachable sprinkles. Why, you might ask? Because, I might answer, my grandma is 96 years old. As much as I’d love to foist the world of Spectacularly Symbiotic Sweet and Salty upon her, I thought I’d better stick with the world of Tried And True Sweet And Sweet at Christmas-time.
After all, it was more important to me that she liked her present than I aligned myself with contemporary cooking fads.
(Um, raw vegan dabbling aside, that is…)
Chocolate Nutella Fudge with Sprinkles
Recipe from Cookin’ Canuck, originally based on a Giada De Laurentiis recipe
- Butter to grease pan
- 1 (400g/14 oz) can sweetened condensed milk
- 1 tsp vanilla extract
- 230g (8 oz) dark chocolate chips, or dark chocolate, chopped. Chips chopped chips chopped! (Ahem.)
- 1 cup Nutella
- 50g butter, room temperature, cut into small cubes
- Sprinkles, to sprinkle (ingenious!)
1. Grease the bottom and sides of a 20cm (8-inch) square pan with butter. Line with baking paper, leaving an overlap on the sides (this makes it easier to remove the fudge from the pan once it’s set).
2. In a medium glass or stainless steel bowl, stir together (insofar as you’re able) the sweetened condensed milk, vanilla, chocolate, Nutella, and butter.
3. Make a double-boiler by placing this bowl over a medium pot of just-simmering water (making sure the bowl doesn’t touch the water). Stir until everything has melted together and the mixture is smooth, about 5-7 minutes.
4. Pour/scrape the mixture into the prepared pan, smooth the top with a spatula, and sprinkle with sprinkles (ingenious!). Refrigerate until the fudge is firm, at least two hours.
5. Remove the fudge from the pan and cut into little squares, using a knife (you might need to run the knife under hot water and dry it off before cutting). Place in little patty-pan cases, if desired, and store in the fridge in an airtight container.

No no no, I’m the GOOD angel on your shoulder! Nutella fudge = happy! Though you could always try, erm, making nutella from scratch with stevia, and, um, using almond butter instead of sweetened condensed milk and, well… no. I don’t think that would work at all.

Oh My! This looks amazing. I love the little paper cups in the top picture, and of course the sprinkles just make it. I’m sure the fudge eaters in the house would absolutely love this. Pity is 47 degrees here right now, and the thought of even stirring up some fudge is just too much energy expenditure to contemplate. Will have to store this away in the When It’s Cool Enough to Do Anything file. And I’m sure it’s not accident that you’re right en vogue with World Nutella Day is it?
Holy bucket, are you serious? 47 degrees?! Please tell me you have air-conditioning. It’s been 36-8 here the past few days and I don’t have air-conditioning, so it’s been pretty unbearable. Wait, what? World Nutella Day? I honestly had no idea!
Ok so maybe 47 was a slight exaggeration…. It has been too hot though. We don’t have airconditioning (well it’s in one room), but we just had ceiling fans installed today- am really enjoying those tonight.
We had some rain tonight which cooled things down a little, and was almost as good as ceiling fans! However, the temp is back up to 33 over the next few days… fans would come in handy then!

Are you thinking homemade raw Nutella, made with hazelnuts and cacao and palm sugar, combined with melted raw chocolate, blended with an almond milk-Irish moss gel of sorts, plus a touch of coconut oil? Cuz that’s what I’m thinking.
I was with you up until the “Irish moss gel” part. What the what? And whatever that what the what is, I’m rather certain it ain’t available to me here in Canberra…
Irish moss is an ugly seaweed. You soak it in water for awhile to soften it, then blend it with an equal amount of clean water to make Irish moss paste/gel, which can be used as a thickener (in mousses, creams, puddings, and the like) or can be added to raw breads to make them fluffier. Great stuff

Problem is, I haven’t yet figured out what Asians CALL it (because they don’t call it Irish moss, apparently). I knew where to find it at the Asian market in OKC, but I haven’t been able to locate it in the market here at home! And I’m not willing to shell out $8 for 1/2 lb from some fancy-pants site online when I KNOW you can get a 1 lb bag for $2…

I made this today! Well sort of. I decided it was too hot to be using double boilers, so did a microwave version instead. It was all going well til I added the nutella and then it wanted to seize. The difficulty was compounded by the fact that a friend rang in the middle of it all, so it didn’t actually turn out too badly for One Handed Nutella! The butter seems to have separated out a bit, but it tastes ok. I took it to a concert/short film festival in the botanic gardens tonight, and it was gobbled greedily by all concerned, who seemed impressed. And I didn’t even bother with sprinkles- again all a bit hard one handed. But it can be done…..
